Pico de Gallo

There is only one thing to make when you have a ton of fresh tomatoes... pico de gallo!


Look at the fresh veggies from the garden! We picked two different kinds of tomatoes, some green onions, a green bell pepper, fresh parsley, a few basil leaves, and some green jalapeƱo peppers! The large onion at the top and the three larger bell peppers were given to us by our uncle.

 
Usually pico de gallo calls for cilantro but we substituted parsley in. We also have more onions than usual and the bell peppers were a nice addition. Notice that our ratio of tomatoes is less than normal just because we like all those other things more... to each their own!



Add some lime juice, salt, and pepper and you are done.

Veggie Haul and Pizza

Yesterday we did a little harvesting from the garden and got some more delectable veggies!


We used some of them to make dinner: home-made pizza!

 
 
As you can see, our family likes options!

 

I will not be posting anything tomorrow as it will be a fantastically hot weekend and I will be camping at Green Peter Lake! So see you again Sunday!

Omelet Goodness

Today my brother and I made omelets for breakfast!
 
I went and gathered some things from the garden. I chose some (clockwise from top) green onions, basil, parsley, swiss chard, and an early wonder beet.
 
 
Some eggs... there were only six left so we each got three!
 
 
Cooking up the beet a little before throwing it in the omelet.
 
 
The beauty of the veggies and egg before I drowned it all in mozzarella cheese!

My brother's omelet. He decided to forego the beet and substitute it with ham and a healthy dose of ketchup!

Veggie Stir-fry

Last night for dinner, we did a stir-fry with some veggies from our garden!

Look at this swiss chard...



A smallish beet that I probably picked too early, oh well.


The veggies we chopped up from the garden: swiss chard, beets, carrots, snow peas and green onions (they didn't make the picture because I forgot to get them until the last minute).


We threw in some noodles, chicken, peanuts and garlic... and this plate of goodness was created! SO DELICIOUS! Cooking with fresh vegetables from our garden made it taste so much more flavorful and satisfying.
